Thomas Legacy Cabernet Merlot Franc 2013

Hand harvested between the 3rd and 12th of April 2013. The fruit was perfectly ripe, and the stems were well lignified. In the winery, the bunches were destemmed, and individual berries were screened to retain only the ripest fruit. The berries were crushed, transferred to small open-top fermenters and soaked for 5 days to benefit colour and tannin extract. The must was warmed and a spontaneous fermentation by the native vineyard yeasts took place for a period of 10 days. Post fermentation the young wine rested for 3 weeks “on skins” before being pressed. The wine was matured in French oak barrels for 18 months then blended on the 8th of January 2015 and bottled unfined on the 15th of February 2015. Bottled aged for 5 years prior to release.
